Seeking to create and maintain perfect harmony between the human and the natural environment, we focus particularly on the diet of our guests. We are convinced that only our high-quality food can be produced from ingredients that are carefully grown in our own high-quality soil. That is the purest way to absorb the energy of this amazing place and enjoy the fruits of nature that it can offer.
Every dish in our restaurant contains locally-grown products. We have established a small farm, where we raise our own animals (sheep, goats, rabbits) and birds (hens, ducks and geese). We have dedicated a large part of the territory for vegetables and fruits: we grow them naturally and organically without the use of chemicals or fertilisers.
We are happy to be able to serve our own tomatoes, cucumbers, onions, garlic, potatoes, courgettes, pattypans, pumpkins, cabbages, carrots, salads, radishes, beetroots, turnips and apples. Our carefully nurtured fruit trees and shrubs ripen a harvest of quinces, strawberries, blueberries, currants, gooseberries and buckthorns.
Our bakery uses flour that was made from locally-grown rye, wheat and oat.
The forest of the park is not only beautiful for the eyes of our visitors with stunning views and fresh air; but also for the mushrooms, berries and other tasty treats of nature. We make various dishes from locally-gathered boletuses, honey fungus, chanterelles, cranberries, raspberries, wild strawberries, bilberries, cranberries and wood sorrels. In spring we collect birch sap, in summer – birch leaves and linden blossoms.
Appreciating the magical properties, tastes and smells of natural herbal teas,, our professional herbalist makes bags of herbal tea mixtures and uses the produce for use in the kitchen to flavour our dishes. Our resident bee-keeper affectionately takes care of our hives that produce pure honey with the taste of field and forest flowers.
Our goal is to provide our guests with fragrant garden and forest produce even during the coldest season of the year. Therefore, we not only use fresh vegetables, fruit, mushrooms and berries, but also preserve them for winter using traditional methods. Harmoniously grown and carefully harvested products are dried or preserved as marinated or salted goods or jams.
